Legacy Cheese

Legacy Cheese in Westview Shopping Center offers a variety of Wisconsin and Minnesota made products from cheeses and sausages to jams and salsas.

Legacy Cheese — previously Rybicki Cheese — has been owned by three generations of the Rybicki family.

It started as Rybicki Cheese in the Mall of America in December 1993 when Dick and Jan Rybicki relocated their shop from Wisconsin.

There is stood as a staple in the mall for almost thirty years, selling Wisconsin cheese, eventually passing the shop down to the owners’ daughter Carrie Rybicki Olds and her son Bob Weinfurter.

But when the pandemic hit the lack of customers combined with the high cost of rent at the Mall of America caused Rybicki Cheese to close its shop.

Fortunately, Olds and Weinfurter were able to continue selling their products at Hastings Farm Market, establishing their base in Hastings.

Now, Olds and Weinfurter has reopened the shop under its new name Legacy Cheese in the Westview Shopping Center here in Hastings.

“We changed the name because it was [my dad’s] legacy and our legacy,” Olds said.

Legacy Cheese sells Wisconsin Cheeses as well as Wisconsin and Minnesota made products like sausages, jams, salsas, bloody mary mix and barbecue sauces.

It offers cheese gift boxes in all price ranges and can have cheese trays ordered with a 24 hour notice.

Their new location is much bigger than their shop in the Mall of America so Olds said they’ve been able to start selling Packer and Vikings memorabilia now as well.
