Hy-Vee rolls into Cottage Grove

Starting at 6 a.m. Tuesday, Aug. 8, Hy-Vee is open seven days a week, 24-hours a day in Cottage Grove.
The sprawling 98,000-square-foot store includes grocery, produce, made-to-order food, bakery, a sit-down restaurant, drive-thru pharmacy, baby products, in-store dietitian, health foods, floral, a walk-in clinic, beauty, clothing, Starbucks, liquor store and a gas station convenience store.
To-go food counters vary from a fried chicken and comfort food station to a made-to-order sushi. A juice and smoothie bar, made-to-order Mexican food, Italian street food, salad and olive bars, charcuterie station and a deli station round out the several varieties to choose from.
Over 650 people were hired to work at Hy-Vee, 160 full time.
The store cost more than $26 million to build and stock and sells over 57,000 items.
CEO Randy Edeker said they looked at and evaluated almost every suburb of the Twin Cities, and landed on Cottage Grove for one of their locations. Stores will be opening in Farmington, Shakopee, Maple Grove, Robbinsdale and Columbia Heights in the next few years.
