Mexican food truck opens in Hastings

There’s a new food truck in town and owner Fernando Ortiz said that he’ll be seen around Hastings at all the major events this summer. Ortiz recently started Taco Borracho, a food truck that serves “authentic Mexican with a Texas twist,” he said. Taco Borracho will be at Rivertown Days, the car shows downtown and some other events as opportunities are presented.

Taco Borracho serves chicken, beef and pork tacos. It is about a 12-hour process to make the meat he serves, but that is what Ortiz said makes everything taste so good. He marinates the chicken overnight and the pork is slow roasted making the carnitas very juicy and tender.

What gives Ortiz’s tacos a bit of a Texas twist? The toppings, he said. Peppers and onions are added to give it a bit of a fajita style and then there are the additional toppings like salsa and guacamole, which are made from scratch.

The toppings had a part in inspiring the name of the food truck. Taco Borracho, meaning “drunken taco,” was named for how big the tacos are made.

“You make them so big with everything on it, not just the regular tacos, (but) a big fajita plate,” Ortiz said.

Ortiz, who grew up in Texas, started working in restaurants at young age because he said that his family had a lot of restaurants. He started out as a dishwasher making a dollar a day. As he got older he got another job, but he would continue to pitch in with the family business and a passion for cooking developed and grew.

Ortiz, who has been a Hastings resident for about 15 years, said that his food truck venture began after he retired from working on the railroad. He was out cooking for his neighbors and friends, which is a common occurrence, when one of his neighbors suggested he start a food truck.

“It’s not a bad idea, I love cooking, I love talking to people and I like to be outside,” Ortiz said.

It was as simple as that. Ortiz began working on opening Taco Borracho and he said that he just worked at his first event this month. Taco Borracho was at the Two Rivers Vintage Crawl event outside of Eye Candy REfind. The food truck did well, selling out of everything. Ortiz said he wasn’t expecting to sell out, but it was a great start and he said he will be well-prepared for Rivertown Days in July.
