Candy Creations in operation: Business specializes in making handmade truffles

About three years ago, Kelly Kimlinger of Hastings needed to come up with a way to fundraise for a trip her son was about to take. Eventually, she decided to make her own truffles and she then sold them as part of the fundraiser.

"They were a hit," Kimlinger said.

That prompted her to keep at it. She made more and sold them to family and friends over the holidays.

"They kept encouraging me to start my own business - so I did," she said.

About one year ago, she launched her business, Candy Creations by Kelly, and business is picking up. She now makes the truffles at the Rivertown Cakes kitchen, located across Highway 61 from Perkins.

In addition, her chocolate-covered Oreos, her pretzel drumsticks and her chocolate dipped Rice Krispie bars are sold out of a food truck in St. Paul, and her truffles are given to guests every day at a bed and breakfast in Cannon Falls.

"I just love making treats," she said. "I enjoy just helping people make their special event just really special."

Many times, Kimlinger makes truffles as a party favor for weddings, and she's looking into ways to grow her business with weddings. She's experimenting with dessert bars, chocolate covered strawberries and the like.

Her business has grown so quickly that her full-time job as an insurance coordinator is now her part-time job. That extra time with her business is paying off, she said.

Kimlinger moved to Hastings 30 years ago. She is married to John Kimlinger and they have three children, Kendra, Luke and Casey.

Kimlinger and Rivertown Cakes owner Angie Mosher have teamed up to offer a cupcake and a truffle of the week. Their location at 1207 Vermillion Street is open Thursday afternoons from 1 p.m. to 5:30 p.m. and from 8 a.m. until noon on Fridays and most weeks the treats sell out quickly. Hours may vary.
