Las Margaritas is planning a new addition that will bring a new look to Vermillion Street. The addition would add 96 seats to the restaurant.

The Hastings Planning Commission reviewed the site plan Monday evening and sent a recommendation for approval to the city council. The plan includes a 2,000-square-foot addition on the south side of the building, on the site of the former Tai Chi restaurant.

The owners of Las Margaritas proposed a plan that would close one of the three driveways on Highway 61, leaving the northern and southern entrances. The Minnesota Department of Transportation, however, requested that only one driveway be left open to the highway, in keeping with its plan to minimize direct access from Highway 61. Las Margaritas is appealing the request, but has a plan in place in case MnDOT denies the appeal.

The new addition includes a new bar, remodeled restrooms and a new seasonal dining patio. The exterior would be done in the same style as the existing restaurant, and parking would be created all around the building.

Planning Commissioner Don Slaten questioned traffic management on Highway 61 in the area, pointing out that the intersection of the highway with 22nd Street is a "difficult" one at best. Community Development Director John Hinzman said that the next intersection south at 23rd Street has been tentatively identified as a potential location for a new stoplight, but that MnDOT has no plans yet to install one.

The Hastings City Council will review the site plan at its Dec. 3 meeting.
